When British Tradition meets Hong Kong Culture
Hong Kong-style milk tea originates from British colonial rule over Hong Kong. The British practice of afternoon tea, where black tea is served with milk and sugar, grew popular in Hong Kong. "Hong Kong-style milk tea” is local adoption of it but it is brewed with Ceylon and a secretive mix of other types of black tea and is mixed with evaporated or condensed milk.
The "Hong Kong-style milk tea” is a rich and comforting drink with strong tea flavour and packs with caffeine punch, yet it goes down smooth.

Add one tea bag to a boiling pot with 270ml of hot water.
Boil at high fire for 5 minutes. Then turn to medium fire and boil for 15-20 minutes with pot lid open until the tea is reduced to 200ml.
Pour the tea into a cup, and add evaporated milk or condensed milk.
Ideal tea and milk ratio would be 70:30 or 80:20.

Preparation Guidelines
Add 12g (per cup) tea leaf to a pot with 250ml of water.
Boil for 15 minutes. When the tea is boiled up, turn to a middle boil with the lid on.
Pour in a 250ml teacup with a filter [1], [2] to filter out the tea leaf.
Add evaporated milk or condensed milk. Recommanded Tea : Milk ratio is about 7:3 to 8:2.
